Bonfire's classic delights

By Nicole L. Gill

Bonfire brings familiar, and yet new treats, to dessert in the District: campfire skillets and s’mores. The downtown restaurant, which opened in May, brings the bonfire theme to a restaurant. “We wanted to bring more familiar desserts to the restaurant to bring (diners) back to a personal experience that they’ve had,” said Executive Pastry Chef Ellen Diekemper. “Bonfires and camping are a very personal experience to people,” she said, adding the restaurant provides an experience and “new flavors (diners) wouldn’t think about.” Those flavors include peanut butter and banana and strawberry shortcake s’mores.

In addition to Bonfire’s sweet treats, its savory menu includes a duck waffle and short rib tots. Chef James Martin is overseeing the restaurant’s culinary program as well as that of other Social Restaurant Group properties. What’s next for Bonfire? There are “a lot of exciting things coming up in the next couple of months,” Diekemper said.
